Digitalization is reshaping industries across all sectors, including the international company backaldrin, a leader in developing innovative bread concepts and high-quality baking ingredients. As part of backaldrin’s digitalization strategy, this project—carried out in collaboration with the RG Bioinformatics and the Software Compentence Center Hagenberg—aims to develop a specialized system to support and optimize the baking goods development process.

At the core of this system is a high-quality database that we developed to integrate both production and process data . This database is designed to serve as the backbone for advanced artificial intelligence and optimization methodologies, allowing the extraction of critical insights into product development and the relationships between different baking products and ingredients. Furthermore, the development of an intuitive web application permits easy searchability of the high-quality data, enabling faster data-driven decision-making.

The goal of this project is to enable a deeper understanding of the development workflow and inter-product dependencies, driving innovation and sustainability in baking goods development at backaldrin.
