Paper about nutrients, bioactive compounds, and minerals in apples and the influence of weather during ripening finally published!

Over the last years, our colleagues at the Center for Food Technology and Nutrition at FH OÖ, Wels have gathered and analyzed data of 16 varieties of apples harvested in Austria. We also analyzed these data using statistics and machine learning, in order to identify putative correlations with weather conditions during ripening. The results of this study are now published in the paper “Nutrients, bioactive compounds, and minerals in the juices of 16 varieties of apple (Malus domestica) harvested in Austria: A four-year study investigating putative correlations with weather conditions during ripening” by A. Tschida et al, Food Chemistry Vol. 338, Elsevier, 2020.
